If you are grumbling about how some of the ingredients here are not Irish, read the above paragraph again. (*wink*). Here is the scoop...
Shred the cheeses. If you must purchase pre-shredded, I won't judge (since I am asking you to refrain from judgement over our "Irish-ish" nachos), but know you're getting more than just cheese when you purchase pre-shredded.
Bake the waffle fries as directed. Optional, but I prepped the deli corned beef ahead...however, when I do this again, I will skip it since it is going to go back into the oven once the fixins' are layered on top.
I positioned the cooked waffle fries in the center of my kitchen island and placed the other ingredients all around. Together, we built our Irish-ish nachos by layers and back into the oven they went to get all melty with crispy edges. Fully Irish or not, these were delicious!
